About Chinese Scallion Turnovers

Chinese scallion turnovers or cōngxiànbǐng (蔥餡餅) in Chinese, is a type of savory flatbread often sold in Northern style Chinese restaurants or as a popular street food in many parts of Southeast Asia. Different from the western turnovers that are usually stuffed with meats and cheeses or sweet fillings, Chinese scallion turnovers are simply made with generous amount of chopped scallion and/or minced meat, seasoned with salt, ground white pepper and sesame oil. And the dough is simple made with flour, water, pinch of salt and very little amount of vegetable oil, into an egg-free unleavened pastry. After filling the turnovers into a small stuffed bun, its’ then pressed flat and pan-fried on a greased skillet until golden brown and slightly crusty, served hot and sometimes with a little soy sauce or hot sauce.
