Pao de queijo literally means “cheese bread” in Portuguese; it’s a type of small cheese roll, a popular snack and breakfast item in Brazil. The original recipes were brought to Brazil by the African immigrants, they used cassava roots to make bread, and by the late 19th century, more ingredients such as milk and cheeses were added to the recipe, and hence the birth of pao de queijo. These breads are often freshly baked and sold as street food, or in bakeries and supermarkets, as well as frozen products to be baked at home.

Interestingly, Pao de queijo was recently brought to Japan by the “dekasegi” (the term refers to people who moved to Japan from Brazil), and in they’ve developed recipes using rice flour instead of cassava/tapioca starch.
