ANKO’s NDL-100 Noodle Extruder can process doughs with a higher protein content, utilizing recipes that add fish paste, whey, quinoa flour, buckwheat flour, chickpea flour and other grain flours or seed flours.

ANKO commercial noodle machine can produce specialty noodles that are high in protein with a low Glycemic Index (GI) as well as gluten-free noodles for people with food allergies or specific dietary preferences.

The machine’s extruding design can produce fish-shaped, triangle-shaped, heart-shaped, or dumbbell-shaped long noodles with different molds that traditional cutters are not able to make. Additionally, this extruding design can prevent product deformation caused by dull blades.

ANKO commercial noodle machine is compact in size (only 1.3 square meters or 14 square feet) and it is entirely waterproof making cleaning flour or dough residue easily accomplished with just water. When producing noodles that are 3mm (0.12inch) in diameter the output can reach up to 100kg (220lb) per hour. This device is suitable for small scale noodle suppliers, central kitchens, chain restaurants, and larger scale food factories. ANKO’s machine can produce approximately 100kg (220lb) of noodle per hour. It has a unique auger, cold water-cooling, and a special blade to ensure the noodles will be perfectly made with great textures. This innovative commercial noodle machine can be used to produce large quantities of noodles with unique shapes, such as heart-shaped, fish-shaped and dumbbell-shaped, as well as triangle-shaped noodles that increase the surface area to help absorb sauces after cooking. This machine is only 1.3 square meters (14 square foot) making it suitable for specialty noodle producers, central kitchens, chain restaurants, and food factories of any size. The automated noodle production starts after the dough is loaded in the hopper and then the machine’s automatic portioning function does the rest.
