Eating habits have been changing since the pandemic started. People prefer taking out and enjoying food in an open space to eating indoors. Therefore, the aromatic baked flatbread becomes the first choice to take out, which is convenient and can wrap anything you like. In this issue, we’ll introduce different flatbread.

Whether cooked on a hot griddle or freshly baked in a tandoor (oven), there are numerous different flatbreads made with various types of flours, ingredients, and recipes into leavened or unleavened, and/or layered staple foods of each culture. Flatbread develops into authentic cuisines and plays pivotal roles in the culinary world.

Most flatbreads are made soft and large enough to wrap different ingredients into sandwich rolls, and a delicious meal on the go that doesn't require proper cutleries. And with the recent awareness of gluten-free diets , many flatbreads and pancakes are replacing wheat with buckwheat, rye, corn or, even rice flour, to create an array of alternative options.

Hereby, we've selected a few popular flatbreads and pancakes to share with you:

Tortilla – The most popular

As Mexican cuisine spreads its charm from the American borders worldwide, tortilla has become the best seller in the flatbread category on Earth. Tortillas are versatile in taste and can hold up meats and sauces, which is why it's widely used to make burritos , tacos, nachos and, fajitas. It also brings convenience for modern-day people that are often on-the-go.

The origin of tortillas could be traced back to as early as 10,000BC when corn was used as the main ingredient and the regional staple. Later on, wheat flour was introduced and gradually became more popular on the market for making tortillas than corn. According to the statistics provided by the TIA (Tortilla Industry Association in Mexico), in 2018, flour tortilla takes up to 43% of the total market share, slightly higher than corn tortilla of 42%. (Roughly around 94% of the domestic tortilla consumption in Mexico is made with corn, but in the U.S. tortillas are mainly made with flour.) And tortilla “chips” are placed third with around 11% market share. Last but not least, the “Tortilla Market by Future Market Insight” report predicts that the global market value for tortillas has the potential to reach up to 12.3 billion USD in 2028.

Chapati and Paratha – Majesty Duo of Indian Flatbreads

When speaking of Indian cuisine, besides the various fragrant and scrumptious curries, there is always hearty bread on the table. The most common may be the thin and soft chapati, made with whole wheat flour, water and, salt, it’s an unleavened flatbread baked at a high temperature, which often forms a hot air bubble while cooking. It’s substantial, flavorful and, often torn into small pieces and enjoyed with curries.

On the other hand, paratha is made with ghee (or other fats), folded repeatedly into rich and fluffy layered flatbread, so splendid and flavorful. Paratha originated and popularized in North India, it’s served as the local breakfast (also commonly found on the lunch and dinner menu), and paired with sugar-free lassi (yogurt drink) or chai tea. If fried with an egg, the scent can remind many Chinese of their comforting scallion pancakes from home.

More than the plain paratha, locals love the stuffed versions even more. The most classic is the spiced potato “Aloo paratha”. A bite of spicy and creamy potato filling in the layered pastry, it's heavenly for all Indian food lovers.

Crepe and blini are charming and delicate pastries that often relate people with luxurious French chic dining or the Russian Imperial cuisine. Both of which emphasize the sensational texture, where crepe is made more buttery and silky soft, and blini is fluffier due to the addition of yeasts and whipped egg whites.

Crepe originated in the North of France, it could be made with wheat flour into delicate, thin pancakes and served with sweet spreads, fruits, and/or cream, or be layered up with fillings to make the toothsome mille crepe cakes. And, there are “galettes”, which are savory crepes made with buckwheat flour for the more intense flavor, often served with cheeses, ham and, eggs. Whether sweet or savory, crepes could be enjoyed as a simple snack or a light meal and have their place in people's hearts.

According to a report by Technavio.com, the market value of crepe manufacturers will reach over 50 million US Dollars from 2018 to 2022. Meanwhile, within the EMEA regions (Europe, Middle East and, Africa) will also reach up to 39% growth.

Blini is considered the national delicacy in Russia, which could be made into the size of a crepe, or smaller palm-sized pancakes. It’s traditionally consumed with some jam and honey, or luxuriously with sour cream, smoked salmon, or even caviar for the royalty. This golden-colored round pancake has been around for over a thousand years and has been recognized as the symbol of the sun in local traditional celebrations. It also symbolizes hope and emotions, not just a staple, but a necessity in people's lives.
