Dim Sum – Classic Hong Kong Style Fusion Dishes with Chinese & Western Influences

It could be traced back to the Cantonese Tea Breakfast culture, “Yum Cha” (飲茶/養茶) was considered the origin of “dim sum” style dining, and soon after the introduction to Hong Kong, the popularity drastically increased, which followed by various foreign influences on the menu. Similar to Spanish tapas and French hors d’oeuvres, dim sums are served in many forms and flavors, whether sweet or savory, it’s good to pair with tea, or served as main courses. It certainly had become an iconic Chinese style cuisine around the globe.

And as the “Yum Cha” culture became mainstream, many dim sum chefs started to create fun, innovative and scrumptious dim sums for the mass market. There’s often an upgrade on the dough pastry, filling and could also go into more details of the process of making, in order to generate new creations, as well as ready-to-consume frozen products, that could be reheated and served at house parties whenever and wherever.

In 2020, there’s an estimation of 30% increase in the number of vegetarians worldwide, and the Muslim community may also exceed a quarter of the global population, the combination of the two creates large market demands for food products of special dietary requirements.

With the development of recent meat alternatives, it’s possible to produce vegetarian-friendly shumai, hargao (shrimp dumpling) and wonton with artificial meats and vegetables.

Shumai

Usually made with ground meats and wrapped in a thin pastry, it’s often topped with simple garnish such as green pea or something more luxurious, such as caviar. These bite-sized treats are often made colorful and are considered everyone’s favorite item. (More about shumai will be shared in the next issue)

Baozi (Filled Buns or Bao)
