Xiaolongbao generally refers to steamed dumplings or meat stuffed buns originated in the Jiangan region of China; however, there are multiple ways of making xiaolongbao and many different styles according to the regional recipes. Xiaolongbaos are stuffed with seasoned mince pork and sometimes with frozen stock jellies, so it'll be soupy after steaming; yet, typically it can be made with either leavened or unleavened dough wraps, which will affect the texture of the bun after steaming. Leavened xiaolongbao has a fluffier and more airy bao-like texture, whereas the non-leavened xiaolongbao is more like a dumpling.

ANKO's SD-97 series Automatic Encrusting and Forming Machines are recommended for producing leavened Xiaolongbao. They are designed to work with dough of various different consistency, viscosity and texture. All machines are equipped with automatic encrusting function for filling the dough tubes with ground meats and/or other ingredients such as chopped vegetables, cheeses and bean pastes. Then the patterned molds and/or generic shutters that can be applied to the machines to form uniformed products into customized shapes and are capable of sealing each of the leavened xiolongbao with 6 or 9 fold marks.
ANKO's HLT series, with added-on EA-100KA Forming Machine are also capable of producing leavened xiaolongbao. The special Forming Machine is able to form xiaolongbao with 6, 9 or 12 fold marks, which resembles more to handmade products.
