About Crepe

Crêpe is a type of tasty pancake of French origin; it's made by pouring a very thin batter on a flat metal pan or hot surface, and by tilting the pan or using a special spatula to spread out the batter, a paper-thin layer of pancake is made. In France, crêpes are often eaten with jam, sugar, cream and fruits in the morning. And crêpes can be made savory by adding cheese, ham and even vegetables for lunch or dinner. However, a similar pancake with buckwheat is called “galette” in Brittany. Yet there are also various pancakes of resemblance in other parts of the world, not only the recipe may differ, but also the flavors, sauces and fillings may also be influenced by different cultures.Mille in French means “a thousand” and crêpe refers a type of very thin pancake in France, the name originated from the Latin word “crispa” meaning curled; and mille crêpe is made by layering crêpes and cream into a cake-like dessert.

Naleśniki refers to the French crêpe-like Polish pancake, the basic recipe calls for milk, eggs, flour, sugar and a bit of salt; after mixing all the ingredients into a smooth and runny dough, it’s ladled onto a heated pan with melted butter, the batter is evenly spread out to form a thin layer of pancake, and it’s removed from pan after both sides are golden brown. Typically naleśniki may be served sweet with various fresh fruits, jams, fresh cheese curds or sugar, otherwise, it could be served with savory ingredients such as sautéed vegetables, fried chicken, minced meats or potatoes.

Palacsinta is also known as the Hungarian crepe; the name derived from the Latin word “placenta” meaning a flat cake, and there are many similar types of pancakes found in the Central and Eastern European countries. To make palacsinta, first is by mixing eggs, wheat flour, milk and salt into a runny dough, then an adequate amount of carbonated water is stirred in the batter, then ladled on a heated flat frying pan with melted butter, to form and cook the thin pieces of golden brown pancakes. Unlike making French crêpe, which the batter is recommended to settle for hours before cooking, the runny dough for palacsinta can be used immediately. Palacsinta is often served as breakfast or desserts; traditionally they are rolled with various jams, fruit preserves, lemon juice, sugar, sweetened cocoa powder, fresh cheeses or nuts. They could also be folded into quarters or made into “rakott palacsinta” with multiple layers of sweet fillings and baked in the oven, a cake-like dessert that resemble the French mille crêpe.
