India, located in South Asia, is the seventh-largest country by area, and the second-most populous in the world. Indian cuisines is not only about “curries”, but a beautiful collage of traditional and regional flavors, that are based on the wide range of diversity in climate, soil, and natural resources; also influenced by the different cultures, ethnic groups and religions native to India, as well as by the nearby countries, foreign invasions and trades.
Most Indians enjoy a healthy breakfast with tea or coffee, a simple lunch, an “evening snack” (similar to tea time) and the dinner is regarded as the main meal of the day. Nevertheless, the word “sugar” comes from the Sanskrit word “sharkara” (refined sugar) and candy from “khanda” (unrefined sugar), one can easily tell the importance of sweets and desserts in India.
While rice is considered the staple of southern India, breads are of the northern regions; both usually are served with vegetable dishes, achar (pickles) or various chutneys. However, potatoes are also used as a staple in certain regions in India, which was brought by the Portuguese, from Latin America, along with tomatoes, chilies and many other ingredients that the European travelers introduced to the Subcontinent.
